Strawberry Recipe Round-up for Summer
May is drawing to an end and with it the conclusion of National Strawberry Month. Not to fear, you can still enjoy these juicy and healthy red berries all summer long. Strawberries are high in vitamins, fiber, and a form of antioxidants called polyphenols. They lower blood pressure, increase “good” (HDL) cholesterol and protect against cancer (those antioxidants at work!). Packed with vitamin C, one serving, approximately 8 strawberries, provides more vitamin C than an orange! They are also a good source of manganese and potassium. They are low in calories, high in nutrients, contain fiber, and best of all DELICIOUS!
Why not Start with Desserts?
This easy, three-ingredient popsicle is pretty and delicious. Sub almond or soy yogurt if you are allergic to, or don’t like, coconut.
Who doesn’t love a strawberry shortcake? This non-dairy strawberry shortcake (can you say you had me at “strawberry shortcake?”) can be used with coconut whipped cream, non-dairy vanilla ice cream or whipped “cream” like Trader Joe’s Non-Dairy Whipped Topping.
Use other fruit like blueberries, bananas, kiwi, pineapple, and grapes, with your fresh strawberries, or make these with all strawberries, drizzle with a little chocolate drizzled and watch as your kids eat their most of their 3 -5 daily servings of fruits with these beautiful fruit kebabs. Use Enjoy Life! brand chocolate chips for an allergy free chocolate drizzle.
Eat Your Greens, with Strawberries!
Remember, strawberries are delicious in salad! Throw some in with your lettuce or spinach, cucumbers, carrots, and mini peppers or pepperoncinis for a quick and nutritious lunch or snack. For additional inspiration, we rounded up some great strawberry salads:
